Monday Muncher: Gluten Free Mashed Potato Soup

This is one of my favorite soups of all time! And its a regular in my house because my husband likes it too! It is VERY EASY!

(Pictures of ingredients are below because remember I told you I hate recipes without pictures of ingredients, I like to be able to visual what I am trying to find at the grocery store and this really helps me!)

Ingredients
3-5 large potatoes (more or less depending on how much you want to make)
1-2 cups of milk (if you use more potatoes, use more milk)
Butter
2 tbsp GF flour
green onions
bacon bits
shredded cheese
1/2 cup chicken stock

I peal and cut my potatoes into cubes. I boil them until soft then drain the water. Mash the potatoes. In another large pot, I melt a few tablespoons of butter. When melted, I add a couple tablespoons of flour and help create a rue. Add the 1-2 cups of milk and bring to a slight boil- be sure not to spoil your milk during this step. When it comes to a slight bubble, add the mashed potatoes. It should be pretty thick. Stir it up. Add your chicken stock. If it is still too thick, add more milk until it is the consistency you would like. I like it where it is like a thick-pea-soup-kinda-consistency. Use bacon bits, cheddar cheese and green onions to flavor.

It looks long, but really it is very easy. Happy eating!
