Monday Muncher: BLT Lettuce Wraps

My favorite thing to eat in life is BACON! I could not live without it! When I found out I had to eat gluten free items, I was glad that I could still eat bacon =) One of my favorite meals is BLT's (Bacon, Lettuce, Tomato Sandwiches). Well, since I haven't found a gluten free bread that I like- I just decided to not eat bread with my BLT's. You might be thinking "How does that work". I made this meal into a lettuce wrap!

I bake the bacon in the oven. Then I insert bacon, tomato's and onion into a leaf of lettuce! There a modified version of a BLT. My husband still eats BLT"s using white bread, so I just find a couple pieces of bread and fix him a sandwich too. 

Anyways, this is just another way to "fit in" and eat what your husband or your family is eating for dinner, but still complies with the gluten free rules!

  1. I think your idea is a good one! Just wanted to recommend Udi's bread, if you haven't tried it. I seldom eat bread, but if I want a grilled cheese (or a BLT!) I would use Udi's bread.

  2. I have tried it and it is ok..I think I am just used to regular bread. I find that the gluten free bread is salty! So with this meal, I just go without it! Thanks for commenting! I love hearing from my followers!
